Chicken Feet Processing

After The Cleaning Process Chicken Feet Are Ready For Processing. Involves Flowing Processes:

Scalding: The feet are scalded in hot water (around 140°F/60°C) to loosen the skin and remove any impurities.

De-skinning: The yellow skin and hairs are removed, to expose the underlying tissue.

De-clawing: Then outer claws are removed, improve texture. and making it edible for humans.

Washing and Rinsing: Finally the Chicken feet are washed and rinsed to remove any remaining impurities.

Freezing

At DGT , We Use BFQ Freezing Process which is the best practice in the industry for Chicken Feet and Paws Freezing.Here Chicken feet are loaded onto specially designed trays or racks to ensure even airflow and efficient freezing.The loaded trays are then placed in a blast freezing chamber, where extremely cold air (-30°C to -40°C) is circulated at high velocities (up to 6,000 ft/min). The chicken feet are quickly frozen to a core temperature of -18°C within 30-45 minutes, effectively halting bacterial growth.A thin, impermeable crust forms on the surface of the chicken feet, preventing moisture loss and maintaining texture. Finally The chicken feet are then transferred to a storage freezer for long-term preservation at -18°C.

Packing Process:

1. Sorting and weighing: Frozen chicken feet are sorted and weighed into 10kg batches.

2. Polythene bag packaging: Each 10kg batch is carefully placed into durable, .food-grade polythene bags

3. Carton packaging: Five 10kg polythene bags are then placed into sturdy 20kg cartons.

4. Sealing: Cartons are securely sealed with adhesive tape to prevent moisture and contamination.

5. Labeling: Cartons are then labeled with Our Own Brand or Private Lable Of Our Customer
